Kevin Lai, Mixologist at The St. Regis Bar

Kevin joined The St. Regis Bar as Mixologist in November 2022. Prior to joining The St. Regis Bar, Kevin was bar manager and later, bar consultant, for Hope & Sesame Guangzhou, one of the most popular bars in Asia which took 18th place in 2022 Asia's 50 Best Bars.

Kevin has participated in a variety of bartending competitions and was awarded Top 4 at the 2020 Flor de Caña Competition China Final, Top 5 at the Elit Art of Martini Taiwan and Jameson Competition China Final.

As Mixologist at The St. Regis Bar, Kevin aims to elevate and establish The St. Regis Bar as one of Asia's Best Bars by bringing new concepts and trends to the table.

The Art of Champagne Sabrage

Champagne sabering dates back to the days of Napoleon and the French Revolution in 1789. After winning a battle, Napoleon's armies would celebrate by drinking champagne, and they would open the bottles using the easiest method on hand.

The evening ritual at The St. Regis Bar celebrates the transition from day to evening, and is marked by the spectacle of champagne sabering. The art of sabrage Evening Ritual is held daily at The St. Regis Macao lobby at 6:00PM .

The Mural

The mural depicts a lush vision of the city and celebrates the city's history as a trading port under a rich golden sky. As a traditional symbol of eternity and youth in Chinese culture, a crane overlooks the growth of the city, with lotus flowers - a ubiquitous symbol of Macao - blooming in the water. A closer look at the verdant edges of the mural reveals the Barcelos Rooster, an armillary sphere and astrolabe that pay homage to Macao's Portuguese and British colonial influence.

Maria do Leste - Mary of the East

Maria do Leste, The St. Regis Macao's interpretation of the iconic Bloody Mary, was forged drawing inspiration from Macao's unique east-meets-west culture. The Maria do Leste tantalizes with intense flavors of chourizo (sausage) from Portugal, pink peppercorn and limes from Brazil, piri piri from Africa, cinnamon and paprika from India, lobster and sea salt from the seas, black vinegar and black peppercorns from China, and lastly, the synonymous egg tart of Macao.
